This recipe makes 12 buns (one pack of dinner rolls) and is easily doubled for a crowd!

Ingredients

For the Dynamite Chicken Filling

  • 2 cups cooked, shredded chicken (rotisserie chicken works perfectly)

  • 1/2 cup mayonnaise (Japanese mayo is recommended for the best flavor)

  • 1/4 cup Sriracha or preferred hot sauce (adjust for desired heat)

  • 1 tablespoon honey or sugar

  • 1 teaspoon rice vinegar

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

  • 1 cup shredded mozzarella cheese

For the Buns

  • 1 (12-count) package of Hawaiian sweet rolls or regular dinner rolls

  • 1 tablespoon melted butter

  • 1/2 teaspoon everything bagel seasoning (optional)

  • Sliced green onions, for garnish

Instructions

1. Prepare the Filling

  1. In a medium bowl, combine the mayonnaise, Sriracha, honey/sugar, rice vinegar, and garlic powder. Whisk until the sauce is smooth and evenly combined.

  2. Add the cooked, shredded chicken to the bowl and toss until the chicken is completely coated in the dynamite sauce.

  3. Stir in the 1 cup of shredded mozzarella cheese.

2. Assemble the Buns

  1. Preheat your oven to 350°F (175°C).

  2. Place the entire block of dinner rolls (do not pull them apart yet) in an ungreased 9x13 inch baking dish.

  3. Using a serrated knife, slice a pocket into the top of each roll, cutting about three-quarters of the way through, but keeping the bottom intact.

  4. Spoon a generous amount of the dynamite chicken mixture into the pocket of each roll. Make sure to press it down slightly and overfill a little, as it will melt down.
